Summer Pasta Sauce

(makes about 4 cups)



Ingredients

2 cups diced tomatoes (about 3 lg)

1/2 cup fresh corn kernels

1/2 cup diced English hothouse cucumber or pickling cucumber

1/2 cup sliced green onions

1/4 cup diced green bell pepper

1/4 cup plus 2 tablespoons olive oil

1/4 cup chopped fresh cilantro

3 tablespoons fresh lime juice

2 large garlic doves, minced

1 Jalapeno chili, minced

1/2 teaspoon ground cumin



Directions

Combine all ingredients in large pot and simmer 2 hrs. Salt and pepper to taste. Serve over pasta.
