Ingredients



For the crushed potatoes200g/7oz anya potatoes, peeled and diced30g/1oz unsalted butter 2 tbsp sage, chopped2 tbsp chives, chopped2 tbsp flatleaf parsley, chopped For the John Dory2 tbsp olive oilsalt freshly ground black pepper2 John Dory fillets For the tomato dressing110g/4oz sun-dried tomatoes, 2 garlic cloves, peeled and crushed½ red onion, peeled and chopped3-4 tbsp olive oil2 tbsp fresh basil leaves, finely chopped



Method



1. Bring a large pan of salted water to the boil.2. Cook the potatoes in the boiling water for 8-10 minutes or until tender.3. Meanwhile, heat the oil in a pan. Season the John Dory fillets and fry for 3-4 minutes on each side.4. To make the dressing, place the tomatoes, garlic, onion and olive oil into a mini-Food processor.5. Blend until smooth. Pass through a sieve into a small bowl and then mix in the fresh basil.6. Drain the potatoes and roughly mash with a knob of butter. Stir in the fresh herbs.7. Spoon the potatoes into two large chefs' rings on serving plates. Level off with a knife and remove the ring. 8. Serve the fillets on top of the crushed potatoes and drizzle with the tomato dressing.
