Thai Chicken Salad (recipes)




Yield: Makes 4 servings



Ingredients:



1/2teaspoon salt

1/2teaspoon chili powder

1/4teaspoon sugar

3tablespoons fresh lime juice

1-1/4pounds cooked skinless, boneless chicken breast, diced

1/2cup chopped green onion

1/2cup peanuts, chopped

1/4cup finely chopped fresh cilantro

1/4cup finely chopped fresh mint

1/3cup mayonnaise









Preparation:





1.Mix salt, chili powder, sugar and juice in a large bowl. Add chicken, onion, peanuts, cilantro and mint; stir until combined. Fold in mayonnaise.







Note:

Used 3 bagels (.75X4).
