Ingredients



½ pack fresh spaghetti¼ pack wild mushrooms30g/1oz butter 2 egg yolks50g/1½oz parmesan cheese



Method



1. Cook the spaghetti in plenty of boiling salted water for 3 to 4 minutes.2. Fry the mushrooms in the butter, until they darken and release their juices.3. In a bowl lightly beat together the yolks, parmesan cheese and season with salt and freshly ground black pepper. 4. Stir the fried mushrooms into the egg mixture.5. Drain the pasta, add to the sauce and stir immediately.

½ onion, chopped2 tbsp olive oil4 slices bacon, chopped150ml/5fl oz double cream2 eggshandful basil, chopped140g/5oz spaghetti



Method



1. Soften the onions in a pan with the oil for two minutes.2. Add the garlic and bacon and fry for another 3-4 minutes.3. Add the cream to the pan and then the eggs.4. Cook the spaghetti according to the packet instructions and drain.5. Add the spaghetti to the pan with the sauce and stir through to coat the pasta.6. Stir in the basil and serve.
