A member of the family Acipenseridae of large anatomically primitive (chondrostean) bony fishes having an elongated, almost cylindrical body with longitudinal rows of bony scutes and a tapering blunt-ended snout, found in rivers and coastal waters of the north temperate zone and valued as food and as the source of caviar and isinglass. Freq. with specifying word indicating a particular species. ME.
