Ingredients



4 sardines, backbones removed½ yellow pepper1 plum tomato, finely chopped2 large slices bread, cut on the diagonal15g/½oz fresh chives4 tbsp olive oilsalt and freshly ground black pepper



Method



1. Place the pepper over a gas flame or on a tray under a preheated grill until the skin blackens.2. Carefully wrap the pepper in cling Film and allow to cool.3. Place a griddle pan on the heat.4. Drizzle each slice of bread with 2 tsp of the olive oil.5. Griddle the bread and seasoned sardines until cooked through and well charred on both sides.6. In a Food processor, blend together the chives with the remaining oil. Season.7. Remove the cling Film from the pepper, then peel off the skin and tear the pepper into strips.8. Top the bread with the chopped tomatoes, griddled sardines and roasted pepper strips.9. Drizzle the bruschettas with the chive oil and serve immediately.
