Tropical Bread Pudding with Orange Sauce (recipes)


Tropical Bread Pudding with Orange Sauce

Yield: Makes 10 to 12 servings



Ingredients:



3/4cup raisins

3cups milk

3eggs

1cup sugar

1cup shredded coconut

2/3cup coarsely chopped walnuts

3tablespoons butter, melted

2tablespoons vanilla

1teaspoon ground nutmeg

1jar (8 ounces) maraschino cherries, undrained

1can (11 ounces) mandarin orange segments, undrained

1loaf (16 ounces) cinnamon-raisin bread

Orange Sauce (recipe follows)









Preparation:





1.Preheat oven to 350°F.2.Lightly spray 13X9-inch Baking pan with Cooking spray.3.Place raisins in small bowl. Pour boiling water over to cover. Let stand 2 to 3 minutes or until plump. Drain.4.Combine raisins, milk, eggs, sugar, coconut, walnuts, butter, vanilla and nutmeg in large bowl; mix well. Add cherries and oranges with liquid; mix well.5.Break bread into large pieces, about 2 inches square. Add bread pieces to milk mixture. Mixture should be moist but not soupy. Pour into prepared pan. Sprinkle with additional coconut, if desired.6.Bake 1 hour to 1 hour and 15 minutes or until knife inserted near center comes out clean. Serve with Orange Sauce.







Orange Sauce



Ingredients:



1-1/2cups powdered sugar

1/2cup butter, melted

1/4cup whipping cream

1egg yolk

2tablespoons orange-flavored liqueur









Preparation:





1.Combine powdered sugar, butter and milk in medium saucepan. Add egg yolk; mix well with wire whisk. Cook over medium heat, stirring constantly, until thickened.2.Remove from heat and add liqueur. Let cool slightly.
