Ingredients



30g/1oz unsalted buter110g/4oz chicory leaves150ml/5fl oz double cream½ glass white wine55g/2oz stilton cheese110g/4oz water biscuits55g/2oz unsalted butter



Method



1. Preheat the oven to 220C/425F/Gas 7.2. Gently melt the butter in a large pan. Braise the chicory leaves in the pan for 2-3 minutes.3. Pour in the cream, white Wine and cheese and simmer for 3-4 minutes.4. Remove from the heat and pour the mixture into an ovenproof dish.5. Place the biscuits in a Food processor and blend to the consistency of fine breadcrumbs.6. Gently melt the butter in a frying pan and pour in the biscuit crumbs. Mix together.7. Remove from the heat and sprinkle the biscuit crumbs on top of the chicory mixture.8. Bake in the oven for 4-5 minutes or until golden.9. Serve.
