Mediterranean Chicken Salad Sandwich

Yield: Makes 6 servings



Ingredients:



4boneless skinless chicken breasts

1teaspoon dried basil

1/4teaspoon salt

1/4teaspoon black pepper

1cup chopped cucumber

1/2cup mayonnaise

1/4cup chopped roasted red pepper

1/4cup pitted black olive slices

1/4cup yogurt

1/4teaspoon garlic powder

6kaiser rolls, split

Additional mayonnaise

Lettuce leaves









Preparation:





1.Place chicken, 1/2 cup water, basil, salt and pepper in medium saucepan; bring to a boil. Reduce heat; simmer covered 10 to 12 minutes or until chicken is no longer pink in center. Remove chicken from saucepan; cool. Cut into 1/2-inch pieces.2.Combine chicken, cucumber, mayonnaise, red pepper, olives, yogurt and garlic powder in medium bowl; toss to coat well.3.Spread rolls with additional mayonnaise. Top with lettuce and chicken salad mixture.
