Ingredients



2 slices of bacon½ cod loin (approx 150g/5oz)1 sprig of fresh tarragon, chopped½ lemon, juice onlysalt freshly ground black pepper.2 tbsp olive oilFor the sauce1 lemon, juice and zest only½ glass white wine1 tbsp tarragon, chopped120ml/4fl oz double cream



Method



1. Lay the bacon on a chopping board and use the back of a knife to stretch the bacon out to approximately double its original size.2. Squeeze the lemon juice over the fish, sprinkle with the tarragon and season well.3. Wrap the bacon round the fish.4. Heat the oil in a pan, rub the oil on the bacon and fry for 5-6 minutes turning regularly.5. To make the sauce, add the Wine to a pan and simmer for two minutes.6. Add all the Other ingredients and stir through.7. Bring to a simmer then serve with the fish.
