Stovetop Summer Squash

Yield: Makes 6 servings



Ingredients:



1-2/3cups water

1package (6 ounces) stuffing mix with herb seasoning packet

3tablespoons butter

1cup chopped onion

1cup chopped red bell pepper

1tablespoon minced fresh basil

2cups sliced yellow squash

2cups sliced zucchini









Preparation:





1.Bring water to a boil in 2-quart saucepan. Add seasoning packet from stuffing mix; cover and cook over low heat 15 minutes.2.Meanwhile, melt butter in large skillet over medium heat. Add onion and bell pepper; cook and stir 3 minutes or until tender. Add basil, squash and zucchini; cook and stir about 3 minutes or until Vegetables are tender.3.Transfer squash mixture to saucepan with seasoning blend. Add stuffing croutons; mix until all liquid is absorbed. Remove from heat; cover and let stand 5 minutes. Fluff with fork before serving.
