Beignets (recipes)


Beignets

(makes 3 dozen)



Ingredients

1 cup milk

2 tablespoons butter

4 tablespoons sugar

1/2 teaspoon salt

1 egg, beaten

3 cups flour

1 package yeast

corn oil for frying



Directions

In a saucepan, heat milk over low heat. Add butter, sugar, and salt; stir well and cool until lukewarm; stir in egg. In a large bowl, mix together half of the flour and yeast. Add milk mixture; beat for 5 minutes. Gradually add remaining flour. Form a ball with the dough; place in a greased bowl, turn dough to coat. Cover dough and chill in the refrigerator for 4 hours. Pat dough onto a floured pastry cloth. Cover and let stand for 10 minutes. Roll dough out and cut into 3x2 rectangles. Cover and let sit for 20 minutes. Deep fry dough in corn oil, a few at a time. Fry until golden on both sides. Drain on paper towels and sprinkle with powdered sugar.
