Guacamole

Yield: Makes 2 cups



Ingredients:



2large avocados, pitted and peeled

1/4cup finely chopped tomato

2tablespoons lime juice or lemon juice

2tablespoons grated onion with juice

1/2teaspoon salt

1/4teaspoon hot pepper sauce

Black pepper

Additional chopped tomato (optional)









Preparation:





1.Place avocados in medium bowl; mash coarsely with fork. Stir in tomato, lime juice, onion with juice, salt and pepper sauce; mix well. Season with black pepper. Spoon into serving container. Serve immediately or cover and refrigerate up to 2 hours. Garnish with additional chopped tomato, if desired.







Tip:

To ripen hard avocados, store them in a loosely closed paper bag at room temperature for a few days.

2 ripe avocados

1/4 cup sour cream

1/2 tomato chopped finely

1/2 cup grated onion

1/2 teaspoon garlic salt

2 tablespoons fresh lemon juice



Directions

Peel avocado and mash well. Add sour cream, tomato, onion, garlic salt, and lemon juice; mix well.






3 ripe avocados (preferably Hass)

½ medium onion

1 garlic clove, unpeeled

1 medium tomato

1 serrano chile

1-2 limes

2 springs cilantro, minced



Heat a griddle or frying pan over medium heat. When hot, place the onion, garlic clove, tomato and chile on it. Turn the Vegetables so that they brown on all sides, approximately 15 to 20 minutes. Remove from heat and let cool a little. Peel the garlic clove. Coarsely chop the onion, garlic and chile and set aside. Coarsely chop the tomato and cilantro and set aside.



A few minutes before you’re ready to serve, peel the avocados and mash them in the onion mixture using a fork or the back of wooden spoon. Mix in the minced cilantro—you can save some as a garnish, if you like—and chopped tomato. Add fresh lime juice, as desired.



Serve with tortilla chips.

1 avocado, stoned, peeled and mashed roughly ½ medium red chilli, finely chopped 1.25g/1/4tsp cumin seeds, dry roasted ½ beef tomato, de-seeded and chopped roughly ½ lime, juice a dash of Tabasco2 tsp chopped fresh coriandersalt



Method



1. In a medium bowl, mix all the ingredients together.2. Chill until required.NB:Avocados discolour very quickly, to slow this down (if not using immediately), drizzle with lemon juice.

1 red onion, finely chopped1 tbsp of ground coriander1 tbsp of ground cumin8 ripe Hass avocados3 red chilli, seeded and finely choppedjuice of 3 lemonstubs of sour cream2 tbsp freshly chopped chives2 large bags of black tortillassalt and pepper to taste



Method



1. In a large bowl combine the red onion, coriander and cumin.2. Add the avocados to the bowl and mash well with a fork. Add the chillies, lemon and season generously and mix well.3. Place the guacamole in the centre of 4 bowls, spoon the sour cream on top and finally sprinkle with the chives.4. Pile the tortillas around the edge of the bowls and serve immediately.
