Ingredients
For the pancakes2 free-range eggs110ml/4fl oz soya milk110g/4oz plain flour½ tsp Baking powder2 tbsp sunflower oilFor the apples2 apples, peeled and cut into chunks2 pears, peeled and cut into chunks3 tbsp honey2 tbsp water75g/3oz walnutsFor the vanilla syrup1 vanilla pod, split, seeds scraped out110g/4oz caster sugar110ml/4fl oz water
Method
1. For the pancakes, place the eggs and soya milk into a bowl and whisk to combine.2. Add the flour and Baking powder and whisk thoroughly to form a smooth batter.3. Heat a frying pan until hot then add the sunflower oil and a large spoonful of batter. Fry over a medium heat until golden brown underneath and little bubbles have started to appear on the surface. Turn the pancake over and cook for a further 1-2 minutes, or until cooked through and golden brown. Set aside and repeat with the remaining batter.4. For the apples, heat a frying pan until hot and add the apple and pear chunks. Fry for 2-3 minutes, then add the honey and water and bring to a boil.Stir the apples and pears to ensure even coating in the liquid, then add the walnuts.5. For the syrup, place the vanilla pod, sugar and water into a saucepan and bring to the boil. Reduce the heat slightly and simmer until thickened.6. To serve, place the pancakes in a stack in the centre of a plate. Spoon the apple and pear mixture around and drizzle over the syrup.
