Ingredients



110g/4oz asparagus tips225g/8oz vine ripened British classic tomatoes, thickly sliced30g/1oz pine kernels, toastedFor the dressing:2 tsp hot horseradish sauce4 tsp garlic wine vinegar8 tsp extra virgin oil



Method



1. Cook asparagus in boiling water for 4-5 minutes. Drain and rinse under cold water.2. Place asparagus, tomatoes and pine kernels in a bowl.3. Whisk dressing ingredients together, then pour over asparagus and toss together.4. Serve.
