Ingredients



For the clotted cream200ml/7fl oz mulled wine200g/7oz mixed dried tropical fruit200g/7oz clotted cream1 vanilla pod, split, seeds scraped outFor the banana tarte tatin50ml/2fl oz water100g/3½ oz caster sugar25g/1oz unsalted butter12 bananas, peeled and cut into 5cm/2in pieces200g/7oz ready-rolled puff pastry



Method



1. Preheat the oven to 190C/375F/Gas 5.2. For the mulled clotted cream, place the mulled wine into a saucepan and bring to the boil. Add the dried fruit, then take off the heat and leave to let the fruit soak for two hours.3. Drain the mulled fruits and, when cool, place the fruit mixture into a bowl with the clotted cream and add the vanilla seeds. Stir well to combine.4. For the banana tart tatin, pour the water into a heavy-bottomed saucepan over a medium heat. Add the sugar and heat, without stirring, until the sugar dissolves. Bring to the boil, then reduce the heat to simmer gently until the liquid turns golden.5. Add the butter and stir in until dissolved. 6. Pour the caramel mixture into an 18cm/7in round baking tin.7. Place the banana pieces into the tin in a very close formation.8. Place the pastry over the top of the bananas and press down well, turning in the edges to surround the bananas. Trim away any excess pastry, then transfer to the oven to bake for 20-25 minutes, or until the pastry is crisp and golden-brown.9. To serve, allow the tarte tatin to cool until just warm, then turn out onto a serving plate. Place slices onto plates and serve each with a dollop of the clotted cream.
