Ingredients



4 bananas 1lb/450g granulated sugar 290 ml/½ pint water 8oz/220g macadamia nuts warmed salt and freshly ground black pepper 170g/6oz Swiss cheese (vacherin) 8 dried figs



Method



1. Dissolve the sugar and water in a small pan and cook until it is a good caramel colour. 2. Add the macadamia nuts and stir. Stir in the figs and the chopped bananna and then very quickly add the remaining ¼ pint of water. 3. Garnish and serve with curled vacherin cheese.
