Ingredients



3 beef tomatoes (British if available, Jack Hawkins are particularly good)3 spring onionsFor the dressing1 tsp Dijon mustard2 tsp tarragon or white wine vinegar2 tbsp olive oilpinch brown sugar1 tsp finely chopped mintsaltfreshly ground black pepper



Method



1. Turn the tomatoes on their side and cut through into slices about 0.5cm/0.25in thick. Arrange in overlapping circles on a plate.2. Trim and clean the spring onions. Cut in half lengthways and slice on the diagonal. Scatter these over the tomatoes.3. Whisk all the dressing ingredients together and drizzle over the salad. Serve.
