Ingredients



1 potato250g/9oz black puddingsalt and freshly ground black pepper parsley to garnish



Method



1. Peel the potato, dice and cooking a pan of salted boiling water until tender.2. Dice the black pudding and fry in a fan for 3-4 minutes until it begins to go crispy and crumble.3. Drain the potatoes, add to the black pudding and continue to fry for 2-3 minutes. Season. Put on a plate and garnish with chopped parsley.
