Blueberry Pancakes with Blueberry-Spice Syrup (recipes)




Yield: Makes 4 servings



Ingredients:



1cup all-purpose flour

2tablespoons sugar

2teaspoons baking powder

1/4teaspoon salt

3/4cup fat-free (skim) milk

2egg whites

1tablespoon margarine, melted

1/2cup blueberries

Blueberry-Spice Syrup (recipe follows)

Nonstick cooking spray









Preparation:





1.Combine flour, sugar, baking powder and salt in medium bowl. Beat milk and egg whites in small bowl; stir in margarine. Add milk mixture to flour mixture, stirring until almost smooth. Gently fold in blueberries. Prepare Blueberry-Spice Syrup; set aside.2.Coat large nonstick skillet with cooking spray. Heat over medium heat until water droplets sprinkled on skillet bounce off surface. Drop batter by 1/4 cupfuls into skillet. Cook 2 to 3 minutes until bubbles appear at edges and bottoms of pancakes are lightly browned. Turn pancakes; cook until bottoms of pancakes are lightly browned. Serve with Blueberry-Spice Syrup.

Blueberry-Spice Syrup

Yield: Makes 1 cup



Ingredients:



1/2cup blueberries, divided

1/2cup maple syrup, divided

1/2teaspoon grated lemon peel

1/2teaspoon ground cinnamon

1/4teaspoon ground nutmeg









Preparation:





1.Bring 1/4 cup blueberries and 1/4 cup syrup to a boil in small saucepan over medium heat. Mash hot berries with fork. Add remaining 1/4 cup blueberries and 1/4 cup syrup, lemon peel, cinnamon and nutmeg. Cook and stir over medium heat about 2 minutes or until heated through.
