Breakfast Burger
Yield: Makes 4 servings
Ingredients:
3/4pound extra-lean ground turkey
1/2cup minced red bell pepper
1/2cup minced green bell pepper
2teaspoons dried onion flakes
1teaspoon dried parsley
1/2teaspoon black pepper
Nonstick cooking spray
4whole wheat English muffins
4large spinach leaves, stems removed
4slices soy cheese
Preparation:
1.Mix turkey, bell peppers, onion flakes, parsley and black pepper in large bowl. Shape mixture into 4 patties; spray with cooking spray.2.Cook patties in large nonstick skillet over medium heat about 7 minutes or until lightly browned on bottom. Turn patties and cook 7 minutes more. Add 2 tablespoons water; cover and cook 3 minutes or until cooked through. An internal thermometer inserted in the center of each patty should read 165°F.3.Lightly toast English muffins. Place 1 spinach leaf, 1 turkey burger and 1 slice cheese on English muffin half; top with remaining muffin half. Repeat with remaining burgers.
