Bruschetta

Yield: Makes 4 servings



Ingredients:



Nonstick cooking spray

1cup thinly sliced onion

1/2cup chopped seeded tomato

2tablespoons capers

1/4teaspoon black pepper

3cloves garlic, finely chopped

1teaspoon olive oil

4slices French bread

1/2cup (2 ounces) shredded reduced-fat Monterey Jack cheese









Preparation:





1.Spray large nonstick skillet with cooking spray. Heat over medium heat until hot. Add onion; cook and stir 5 minutes. Stir in tomato, capers and pepper. Cook 3 minutes.2.Preheat broiler. Combine garlic and olive oil in small bowl. Brush bread slices with mixture. Top with onion mixture; sprinkle with cheese. Place on baking sheet. Broil 3 minutes or until cheese melts.

16 fresh ripe plum tomatoes, very finely diced

4 tablespoons finely minced garlic

1 cup coarsely chopped fresh basil

1/2 cup finely chopped Italian parsley

2 tablespoons fresh lemon juice

pinch crushed red pepper flakes

Salt and freshly ground pepper

thirty-two 1/4"-thick slices French or Italian baguette

6 garlic cloves, cut in half



Directions

In a large mixing bowl, combine the tomatoes, minced garlic, basil, parsley, lemon juice, red pepper flakes, and salt and pepper to taste. Toss very well; set aside for at least 3 hours.



Just before serving, toast the bread under broiler; rub on one side of bread with the cut sides of the garlic cloves. Place a small bowl in the center of a serving platter. Fill the bowl with the tomato mixture and arrange the toast around the bowl. Serve immediately.
