Buttermilk Pancakes with Blueberry-Orange Sauce (recipes)


Buttermilk Pancakes with Blueberry-Orange Sauce

Yield: Makes 6 to 8 (5-inch) pancakes



Ingredients:



Blueberry-Orange Sauce (recipe follows)

2cups all-purpose flour

1tablespoon sugar

1-1/2teaspoons baking powder

1/2teaspoon baking soda

1/2teaspoon salt

1egg

1-1/2cups buttermilk

1/4cup vegetable oil









Preparation:





1.Prepare Blueberry-Orange Sauce. Lightly grease and preheat griddle or large skillet over medium heat.2.Combine flour, sugar, baking powder, baking soda and salt in large bowl.3.Beat egg in medium bowl. Gradually add buttermilk and oil, whisking continuously until mixture is thoroughly blended.4.Stir egg mixture into flour mixture just until moistened.5.For each pancake, pour about 1/2 cup batter onto hot griddle. Cook until tops of pancakes appear dry; turn with spatula and continue cooking 2 minutes or until golden brown. Serve with Blueberry-Orange Sauce.







Blueberry-Orange Sauce

Yield: Makes 6 to 8 servings (about 23/4 cups)



Ingredients:



2tablespoons cornstarch

2tablespoons cold water

1/2cup orange juice

1tablespoon grated orange peel

1bag (16 ounces) frozen blueberries, thawed or 3-1/2 to 4 cups fresh blueberries

1/2cup sugar

2tablespoons orange-flavored liqueur









Preparation:





1.Stir cornstarch into water in medium saucepan until smooth. Stir in orange juice and orange peel.2.Add blueberries, any accumulated juices and sugar to cornstarch mixture. Cook and stir over high heat until mixture comes to a boil. Reduce heat to medium-low and simmer 2 to 3 minutes (4 to 5 minutes for fresh blueberries) or until mixture thickens, stirring occasionally. Remove from heat and stir in liqueur. Serve immediately.
