Clotted custard ice cream (recipes)

Ingredients



6 egg, yolks only125g/4oz caster sugar500ml/16½fl oz full cream milk1 vanilla pod100g/3½oz clotted cream



Method



1. Whisk the egg yolks with a third of the sugar until it reaches the ribbon stage (the whisk should leave a trail).2. Boil the milk with the rest of the sugar and the vanilla pod, split in two.3. Pour the hot milk over the beaten egg mixture, whisking constantly.4. Return to the pan over a medium heat and keep stirring until the custard coats the back of the spoon. Do not boil or leave unattended.5. Allow to cool then churn for 15-20 minutes in an ice cream maker before adding the clotted cream. Churn for a further 10 minutes.6. Place immediately in the freezer.7. Tip: if you don t have an ice cream maker, beat the clotted cream into the warm custard. Cool completely and place in a plastic tub in the freezer. Check every half an hour or so and beat the ice cream until it reaches the desired consistency.
