Ingredients



For the coconut rice pudding: 1L/1¾pt coconut milk1L/1¾pt whole fat milk 100g/3½oz sugar 100g/3½oz short grain rice 2 x vanilla pods 1 x lemon zest 250ml/7½fl oz whipped creamsprinkle of icing sugar For the exotic fruit sticks:1 dragon fruit1 tamarillo1 baby pineapple4 lychees4 kebab sticks½L/17fl oz water100g/3½oz sugarsqueeze of lime juicefresh mint



Method



To make the rice pudding:1. Bring the coconut milk, sugar, rice, vanilla, lemon zest to the boil and then simmer for 20-25 minutes. 2. Take off the heat, drain and cool.3. For the fruit sticks cut the fruit into pieces and skewer onto the kebab sticks.4. Boil the sugar, water and lime juice and leave to cool.5. Soak kebab sticks in the syrup.6. Add whipped cream to the rice and fold in gently. To serve:1. Pour into bowls and top each with a skewered fruit stick.2. Decorate with a sprig of fresh mint.
