Ingredients



one third potato, peeled and chipped110g/4oz cod fillet290ml/½ pint vegetable oilFor the batter:110g/4oz plain flour1 tbsp water2 egg whites, beaten



Method



1. Heat the vegetable oil in a large saucepan.2. Bring water to the boil in a small saucepan.3. In a small bowl mix the flour and water to form a paste. Add the egg white and mix to form a smooth batter.4. Place the potato chips in the water and boil for 2 minutes.5. Drain the potato chips well, then place them in the hot vegetable oil. Deep-fry for 3-5 minutes.6. While the chips are frying, dip the cod in the batter. Add the cod to the hot oil. Deep-fry for 3-5 minutes.7. Remove the cod and chips from oil and serve.
