Ingredients



125g/4½oz plain flour3 tbsp milk2 free-range eggs160g/5¾oz fresh breadcrumbslarge handful fresh flatleaf parsley, chopped2 tbsp finely chopped fresh coriander1 tsp finely grated lemon zest1 tsp ground cuminsea salt and freshly ground black pepper12 French-trimmed lamb cutlets125ml/4fl oz olive oilTo serveherbed yoghurt



Method



1. Put the flour in a shallow bowl. 2. Lightly beat the milk and eggs in another bowl.3. Mix together the breadcrumbs, parsley, coriander, lemon zest and cumin in a third bowl and season with salt and freshly ground black pepper.4. Dip the lamb cutlets first in the flour, then in the beaten egg and finally in the breadcrumbs.5. Heat the olive oil in a large frying pan over a medium heat. Fry the cutlets, in batches so that you don' t overcrowd the pan, for two minutes on each side until they are golden brown.6. Serve with herbed yoghurt.
