Ingredients
450g /1lb fresh cranberries290ml/10fl oz water340g/12oz sugar½ orange, juice only or 3 tbsp port.
Method
1. Put the sugar in a heavy-based saucepan. Add the water and heat gently until the sugar dissloves. 2. Add the cranberries and bring to the boil. Remove from the heat and strain in the orange or port if used, then return to the heat. 3. Simmer for about 10 minutes or until the cranberries have burst and are tender.4. Leave to cool.

knob of butter 1 banana shallot, finely chopped1 garlic clove, finely chopped150g/5¼oz caster sugar200ml/7¼fl oz water75ml/2½fl oz orange juice1 orange, zest only50ml/1¾fl oz port200g/7¼oz fresh cranberries1½ tbsp grated fresh horseradishsalt and freshly ground black pepper
Method
1. Melt the butter in a saucepan and fry the shallot and garlic until softened, but not coloured.2. Make a sugar syrup by dissolving the sugar in the water. Add the orange juice, zest and port and cook until the liquid has reduced by half.3. Add the shallot and garlic to the reduction, along with the cranberries and grated horseradish. Cook for 2-3 minutes and season with salt and freshly ground black pepper to taste.
