Creamy Wild Mushroom Tagliatelle (recipes)

Ingredients



200g/7oz mixed wild mushrooms, brushed and sliced½ large banana shallot, peeled and finely chopped1 garlic clove, peeled and finely chopped2 tbsp olive oil100ml/3½fl oz white wine200ml/7fl oz double cream200g/7oz dried tagliatelle1 tbsp torn fresh basilsalt and freshly ground black pepper



Method



1. Half fill a large saucepan with water. Season with salt and bring to the boil.2. Cook the pasaccording to the packet instructions.3. Heat the oil in a large sauté pan.4. Sauté the shallot for 1-2 minutes to soften. 5. Stir in the garlic and mushrooms and fry for 3-4 minutes until the mushrooms are golden.6. Pour in the wine and bring to the boil for 1 minute.7. Add the cream and simmer for 3-4 minutes until heated through and slightly thickened.8. Drain the pasta.9. Stir the basil into the mushrooms and season well with black pepper.10. Fold the tagliatelle into the creamy mushroom sauce, then serve immediately.
