Fiesta Rice and Sausage

Yield: Makes 10 to 12 servings



Ingredients:



2pounds spicy Italian sausage, casings removed

2cloves garlic, minced

2teaspoons ground cumin

4onions, chopped

4green bell peppers, chopped

3jalapeño peppers,* seeded and minced

4cups beef broth

2packages (6-1/4 ounces each) long grain and wild rice mix









Preparation:





1.Brown sausage on large nonstick skillet over medium-high heat, stirring to break up meat. Add garlic and cumin; cook and stir 30 seconds. Add onions, bell peppers and jalapeño peppers. Cook and stir 5 minutes until onions are tender. Place mixture into slow cooker. 2.Stir in beef broth and rice.3.Cover; cook on LOW 4 to 6 hours or on HIGH 2 to 3 hours.
