Green Tomato Pie (recipes)


Ingredients

4 cups green tomatoes, peeled and sliced thin

1 tablespoon cider vinegar

1 1/4 cup brown sugar

6 tablespoons flour

1/3 teaspoon salt

1/2 teaspoon nutmeg

1/8 teaspoon pepper

2 tablespoon butter

1/2 teaspoon thyme

1 teaspoon basil

2- 9 inch pie crusts



Directions

Preheat oven to 450 degrees.



In a bowl, add tomatoes and vinegar; let marinate for 10 minutes. Combine brown sugar, flour, salt, nutmeg, and pepper; add to tomatoes and mix gently. Prepare bottom crust in pie pan. In a small sauce, melt butter and herbs. Place tomato mixture in pie crust and drizzle with melted butter. Top with remaining crust. Poke vent in the top of the crust and bake for 15 minutes at 450 degrees. Reduce heat to 350 and bake for another 30 minutes.
