Ingredients



10-12 eggsMustard mayonnaise1 tbsp English mustard2 egg yolks1 tbsp white wine vinegara good pinch of salta few turns of white pepper mill300ml/½ pint sunflower oil



Method



1. Hardboil the eggs for 8 minutes.2. Drain, cover with cold water and leave to cool.3. To make the mustard mayonnaise, mix the mustard, egg yolks, white wine vinegar together in a bowl.4. Very gradually whisk in the oil to make a thick and creamy mayonnaise.5. Spoon into a pot, cover and chill until needed. Serve with the peeled hard boiled eggs.
