Herbed Angel Hair Mushroom Wedge
Yield: Makes 8 servings
Your guests will be delighted when you serve this baked pasta-mushroom appetizer!
Ingredients:
4cups cooked angel hair pasta
3/4cup cholesterol-free egg substitute
1/2cup freshly grated Parmesan cheese
2green onions with tops, chopped
1tablespoon chopped fresh basil
1tablespoon chopped fresh sage
1tablespoon chopped fresh mint
1/8teaspoon black pepper
1tablespoon olive oil
2cups sliced fresh mushrooms
1cup Tomato-Sage Sauce (recipe follows)
Preparation:
1.Preheat oven to 375°F.2.Combine pasta with egg substitute, Parmesan, onions, basil, sage, mint and black pepper in large bowl. Mix well. Set aside.3.Heat oil in medium nonstick skillet over low heat. Add mushrooms; cook and stir 2 to 3 minutes or until tender. Add mushrooms to pasta mixture.4.Spray 9-inch square Baking pan with nonstick Cooking spray. Pour pasta mixture into pan, pressing firmly until packed down. Bake 25 to 30 minutes or until crisp and lightly browned and center is firm to touch. Remove from oven; cool slightly.5.Prepare Tomato-Sage Sauce; set aside.6.Loosen pasta mixture from edges and bottom with spatula. Invert to remove from pan. Cut into wedges. Serve with Tomato-Sage Sauce.

Sage, a native Mediterranean herb, has been enjoyed for centuries for both its culinary and medicinal uses. The name is Latin (meaning "safe") and is a Reference to the healing powers once attributed to the herb.
Ingredients:
2cans (10 ounces each) no-salt-added whole tomatoes, undrained
1teaspoon olive oil
3cloves garlic, minced
1/4cup chopped fresh parsley
2tablespoons chopped fresh sage
2teaspoons sugar
1/4teaspoon black pepper
Preparation:
1.Place tomatoes in Food processor or blender; process until finely chopped. Set aside.2.Heat oil in medium saucepan over low heat. Add tomatoes, garlic, parsley, sage, sugar and black pepper. Cook over medium heat 30 minutes or until thickened.
