Italian Sausage with Pesto Pasta (recipes)


Italian Sausage with Pesto Pasta

Yield: Makes 6 servings



Ingredients:



1/2cup packed basil leaves

1/4cup plus 2 tablespoons walnuts, toasted, divided

2cloves garlic, peeled

1/4cup grated Parmesan cheese

5tablespoons olive oil

1package (12 ounces) uncooked linguine

1pound cooked Italian sausage, cut into 1/2-inch slices

2cups broccoli florets









Preparation:





1.Combine basil, 1/4 cup walnuts and garlic in Food processor or blender; process until smooth. Add cheese. With machine running, pour oil through feed tube and process until ingredients are well blended; set aside.2.Prepare pasta according to package directions. During last 2 minutes of Cooking, add sausage and broccoli to pasta; drain.3.Combine pasta mixture with pesto and garnish with remaining 2 tablespoons walnuts. Serve immediately.
