Ingredients
For the marinade:150ml/¼ pint tropical fruit juice3 tbsp olive oilcoarsely ground black pepperFor the salad:450g/1lb button mushrooms3 sticks celery, sliced thinly2 ripe pears, peeled, cored and sliced175g/6oz blue cheese, chilled, then cubed
Method
1. Whisk marinade ingredients together. 2. Slice half the mushrooms and add to the marinade with the remaining whole mushrooms. 3. Reserve celery leaves. 4. Stir celery, pears and cheese into the mushrooms. 5. Garnish with celery leaves.
