Mashed Red Potatoes (recipes)


Mashed Red Potatoes

(serves 6)



Ingredients

2 lbs. small red potatoes

1/2 cup milk

1/4 cup butter

Salt and pepper to taste

Flat leafed parsley



Directions

Wash potatoes and leave skin on. Boil potatoes until they are fork tender. Drain and set aside. In the same pan add milk and butter. Let butter melt and the milk get warm. Add potatoes, salt and pepper to butter mixture. Mash to the consistency of your choice. To serve put in serving bowl with a dab of butter and a sprinkle of fresh parsley.
