Ingredients



For the sea bream:1 tbsp olive oil1 sea bream fillet, cut in half1 lemon, juice onlyFor the salsa:one third onion, diced½ romano pepper, de-seeded and diced3 plum tomatoes, diced2 tbsp olive oil1 lime, juice only30g/1oz fresh coriander, choppedsalt and freshly ground black pepperFor the herb oil:30g/1oz fresh basil30g/1oz fresh coriander30g/1oz fresh flatleaf parsley3 tbsp olive oil



Method



1. Preheat a large frying pan.2. Heat the olive oil for the sea bream in the frying pan.3. Add the sea bream and fry for 3-4 minutes, either side.4. While the fish is frying, prepare the salsa. Put all the salsa ingredients in a small bowl. Stir to combine.5. Prepare the herb oil by placing the fresh herbs and oil in a food processor. Blitz to

chop and form a pesto-like sauce.6. Return to the fish. Add the lemon juice before removing the pan from the heat.7. Place the fish on a plate. Add a spoon of salsa and drizzle over the herb oil before

serving.
