Rawhide Strips with Flame Sauce

Yield: Makes 8 to 10 servings



Ingredients:



2tablespoons vegetable oil

2teaspoons minced garlic

2teaspoons ground cumin

2teaspoons chili powder

2teaspoons brown sugar

1teaspoon salt

1/4teaspoon ground red pepper

2pounds skirt steaks, cut into 6-inch pieces

Flame Sauce (recipe follows)*

Flour tortillas (optional)









Preparation:





1.Combine oil, garlic, cumin, chili powder, brown sugar, salt and red pepper in small bowl. Rub mixture on both sides of skirt steaks. Refrigerate steaks 2 hours.2.Prepare Flame Sauce. Preheat broiler.3.Place steaks on rack of broiler pan 4 inches from heat. Broil steaks 4 to 6 minutes per side for rare to medium doneness inside. Cut each piece across the grain into thin strips. Serve with Flame Sauce and flour tortillas, if desired.







Flame Sauce

Yield: Makes about 3 cups



Ingredients:



4cups grape or cherry tomatoes, chopped

1/4cup minced red onion

1clove garlic, minced

1teaspoon minced habanero pepper*

1/4cup chopped fresh cilantro

1tablespoon fresh lime juice

1/2teaspoon salt

1/4teaspoon black pepper

1/4teaspoon ground cumin









Preparation:





1.Combine tomatoes, onion, garlic, chile and tomatoes in large bowl; drain excess liquid. Stir in cilantro, lime juice, salt, pepper and cumin.
