Red Snapper Scampi
Prep and Cook Time: 12 minutes
Yield: Makes 4 servings
Ingredients:
1/4cup butter or margarine, softened
1tablespoon dry white wine
1-1/2teaspoons minced garlic
1/2teaspoon grated lemon peel
1/8teaspoon black pepper
1-1/2pounds red snapper, orange roughy or grouper fillets (about 4 to 5 ounces each)
Preparation:
1.Preheat oven to 450°F. Combine butter, wine, garlic, lemon peel and pepper in small bowl; stir to blend.2.Place fish in foil-lined shallow baking pan. Top with seasoned butter. Bake 10 to 12 minutes or until fish begins to flake easily when tested with fork.
Tip:
Serve fish over mixed salad greens, if desired. Or, add sliced carrots, zucchini and bell pepper cut into matchstick-size strips to the fish in the baking pan for an easy vegetable side dish.
