Red Snapper with Lime-Ginger Butter

Prep and Cook Time: 18 minutes

Yield: Makes 6 servings



Ingredients:



5tablespoons butter, cut into small pieces

1tablespoon lime juice

3cloves garlic

2teaspoons ground ginger

1/2teaspoon hot pepper sauce

Salt

Black pepper

6red snapper fillets (about 1-1/2 pounds)









Preparation:





1.Preheat broiler.2.Combine butter, lime juice, garlic, ginger, pepper sauce, salt and pepper to taste in Food processor; process until smooth paste forms.3.Broil red snapper 4 to 5 inches from heat 5 minutes. Turn fillets over and broil 4 minutes.4.Place about 1 tablespoon reserved butter mixture on top of each fillet; broil 45 seconds. Serve immediately.







Serving Suggestion:

For a special touch, serve fish with rice and garnish with fresh lime slices and chives.Tip:

Halibut or swordfish can be substituted for the red snapper.
