Ricotta Stuffed Chicken with Sun-Dried Tomato Linguine (recipes)


Ricotta Stuffed Chicken with Sun-Dried Tomato Linguine

Yield: Makes 6 servings



Ingredients:



1broiler-fryer chicken (3 pounds)

1cup reduced-fat ricotta cheese

1cup chopped fresh spinach leaves

4cloves garlic, minced

2teaspoons dried basil

2teaspoons minced fresh parsley

1teaspoon dried oregano leaves

1/4teaspoon salt

Nonstick olive oil Cooking spray

Paprika

Sun-Dried Tomato Linguine (recipe follows)









Preparation:





1.Preheat oven to 375°F. Split chicken in half with sharp knife or poultry shears, cutting through breastbone. Place chicken, skin side up, on counter and press with palm of hand to crack bone so that chicken will lie flat.2.Loosen skin over top of chicken using fingers and sharp paring knife; do not loosen skin over wings and drumsticks.3.Combine ricotta cheese, spinach, garlic, basil, parsley, oregano and salt in small bowl. Stuff mixture under skin of chicken, using small rubber spatula or spoon.4.Place chicken in roasting pan. Spray top of chicken lightly with Cooking spray: sprinkle with paprika. Bake about 1 hour 15 minutes or until chicken is no longer pink in center and juices run clear. Serve with Sun-Dried Tomato Linguine. Garnish as desired.

Its purpose was to restore investor confidence by ending the misleading Sales practices and stock manipulations that had led to the stock market's 1929 collapse (see Stock Market Crash of 1929). It also prohibited the purchase of stock shares without adequate funds to pay for them, initiated registration and supervision of securities markets and stockbrokers, established rules regarding proxies, and prohibited unfair use of nonpublic information in stock trading (see insider trading). It also required that companies offering securities make full public disclosure of all relevant information. The discovery of fraudulent accounting practices among several large U.S. corporations brought demands for greater SEC oversight in the early 21st century.
