Ingredients



1kg/2lb 3oz Jerusalem artichokes 2-3 lemons, halved (to taste)drizzle olive oil 3 knobs butter2 bay leaves2 sage leaves



Method



1. Preheat the oven to 190C/375F/Gas 5.2. Scrub the Jerusalem artichokes in cold water - you don' t need to peel them.3. Cut the Jerusalem artichokes in half and place them in a roasting tin.4. Squeeze the lemon juice out of the lemons onto the Jerusalem artichokes, along with a drizzle of olive oil and a few knobs of butter.5. Add the squeezed lemon halves to the tin, along with the sage and bay leaves. 6. Roast the Jerusalem artichokes for about 45 minutes, until golden-brown and tender. Serve hot.
