Ingredients



1 cucumber, chopped2-3 tomatoes, chopped1-2 peppers, chopped2 avocados, chopped50-100g/2-3½oz bacon, chopped3-4 eggs200-300g/7-10½oz mozzarella, sliced 1cm/½in thick½ lemon, juice onlysalt and black pepper1 small lettuce

Method



1. Add some of the lemon juice to the chopped vegetables and put them in the refrigerator.2. Gently fry the bacon.3. Whisk the eggs and using the same pan as you fried the bacon, without washing it, pour in the eggs and fry until cooked to your liking.4. Put the sliced mozzarella under the grill until browned.5. Arrange the lettuce onto four plates and add the vegetables and bacon.6. Cut the omelette into four and lay on top of the vegetables on each plate.7. Sprinkle the rest of the lemon juice on top and finish off with the grilled mozarella.
