Sweet Potato and Apple Casserole

Yield: Makes 6 side-dish servings



Ingredients:



3tablespoons butter, divided

1/2cup packed dark brown sugar

1/2teaspoon ground cinnamon

1/4teaspoon ground nutmeg or mace

2pounds fresh sweet potatoes, peeled, sliced in half lengthwise and cut crosswise into 1/2-inch slices

Salt

2Granny Smith apples, peeled, quartered and cored

1/2cup granola cereal









Preparation:





1.Preheat oven to 375°F. Grease 2-quart casserole or baking pan with 1 tablespoon butter. Mix brown sugar, cinnamon and nutmeg in small bowl. Place one third of potato slices in bottom of prepared casserole. Sprinkle with salt to taste. Crumble half the sugar mixture over potatoes and dot with 1 tablespoon butter.2.Slice each apple quarter into four wedges. Layer half the apples on top of potatoes in casserole. Repeat layers. Top with remaining potatoes and 1 tablespoon butter. Cover with lid or aluminum foil.3.Bake 25 minutes. Uncover; spoon pan liquid over potatoes. Sprinkle with granola; bake 35 minutes more or until potatoes are fork-tender.
