Ingredients
30g/1oz butter½ red onion, finely sliced2 garlic cloves, crushed1 sweet potato, finely sliced1 tsp ground cinnamon400ml/14fl oz chicken or vegetable stock1 tbsp chives, snippedsalt and freshly ground black pepper
Method
1. Heat the butter in a pan over a medium heat and sauté the onion and garlic with the cinnamon until beginning to soften. 2. Add the potato and some salt and pepper and continue to sauté for 2-3 minutes, stirring frequently. Add the stock bring to the boil and simmer until the potatoes are soft. 3. Blitz in a food processor and return to the pan to reheat and check the seasoning.4. Serve in warm bowls garnished with chives. Eat at once.
