Swiss Canadian Bacon & Eggs

Yield: Makes 4 servings



Ingredients:



8eggs

1/4cup milk

1/2teaspoon salt

1/4teaspoon black pepper

1/3cup finely chopped green onions, divided

Nonstick cooking spray

4slices Canadian bacon, cut in half

1cup (4 ounces) shredded Swiss cheese









Preparation:





1.Preheat broiler.2.Whisk together eggs, milk, salt and pepper in medium bowl until well blended. Reserve 2 tablespoons green onions; stir remaining green onions into egg mixture.3.Spray 12-inch ovenproof skillet with cooking spray; heat over medium-low heat until hot. Add egg mixture. Cover and cook 14 minutes or until almost set.4.Arrange bacon in pinwheel on top of egg mixture. Sprinkle with cheese; broil 2 minutes or until cheese is bubbly. Top with reserved 2 tablespoons green onions. Cut into 4 wedges. Serve immediately.
