Tex-Mex Guacamole Platter (recipes)




Yield: Makes 6 to 8 servings



Ingredients:



4ripe avocados

1/4cup lime juice

3large cloves garlic, crushed

2tablespoons olive oil

1/2teaspoon salt

1/4teaspoon black pepper

1cup (4 ounces) shredded Colby-Jack cheese

1cup seeded, diced plum tomatoes

1/3cup sliced pitted ripe olives

1/3cup salsa

1tablespoon minced fresh cilantro

Tortilla chips









Preparation:





1.Cut avocados in half; remove pits. Scoop out flesh into Food processor. Add lime juice, garlic, olive oil, salt and pepper. Cover; process until almost smooth. 2.Spread avocado mixture evenly onto large dinner plate or serving platter, leaving border around edge. Top with cheese, tomatoes, olives, salsa and cilantro. Serve with tortilla chips.
