Three-Melon Soup

Yield: Makes 4 servings



Ingredients:



3cups cubed seeded watermelon

3tablespoons unsweetened pineapple juice

2tablespoons lemon juice

1/4cantaloupe melon

1/8honeydew melon









Preparation:





1.Combine watermelon, pineapple juice and lemon juice in blender; process until smooth. Chill at least 2 hours or overnight.2.Scoop out balls of cantaloupe and honeydew.3.To serve, pour watermelon mixture into shallow bowls; garnish with cantaloupe and honeydew.
